While I was at the store I bought a few pork chops, I think this is a good fall recipe pork chops and rice casserole. Old family favorite recipe. Maybe make some home made apple sauce too.
I did bake the cheesecake and made the pork chops and rice. This is kind of funny ... I brought out my old Croatian cook book because I knew there was a recipe in it. I could not find it and I went through the cook book twice. Well, it is a well used cook book and a few pages are separated from the actual book but I keep the loose pages tied with a ribbon to the cook book for when I need to use it. Oddly enough one of the loose pages has a recipe I use for making dumplings with chicken paprikash. So, I am putting away the book and I flip over that page and there was the recipe. I created the recipe today from my memory and it turned out really good. There is a shortcut way to make this by using a can of chicken rice soup added to semi boiled rice for the bottom layer for the pork chops to be placed to bake in the oven. I did not do that today. I chopped up some carrots and onions and sautéed them. Then seasoned the pork chops and browned them. I par boiled the rice and used some Vegeta to make a type of liquid broth. I added the carrots/onions to the rice then added the broth and then the pork chops. Baked in a covered roaster for about an hour and this recipe turned out really good today, the right combination of seasoning.
After doing all that cooking I decided no apple sauce today. I baked a striped acorn squash last night so I then cut half of the other half and had it with a little tossed salad too. In the early evening I changed out the 2 wreaths on my side doors. Time to decorate them for autumn. Still have to put the autumn window stickers on the windows and put the main door wreath up too. Something for me to do on another day.
