Well, St. Patrick's Day is upon us and yes, I already had corned beef with carrots and potatoes. It was prepared the day before the holiday and my favorite part is the cold corned beef left over waiting to be made into Reuben sandwiches. That will be today, along with homemade potato salad. I like the recipe from Hellmann's Real Mayonnaise, that is the recipe I use when I make potato salad. I even like it enough so that I use the same blend when I make coleslaw too. How did their ad use to go? Was it "Bring out the Hellmann's and bring out the best." Do you remember that jingle? Also had homemade Irish Soda Bread.
One of my children called me to ask how to make and finish off the corned beef when you cook it at home. I walked them through the directions and I was sent a picture today of a really good looking corned beef. I noticed that there was a piece cut off of it I am sure they just had to take a taste of it, the completed project. After the corned beef is cooked I like to then trim off any of the fat and then make a glaze of brown sugar and yellow mustard and spread it on the top of the corned beef and then put it in the oven for a bit to let it glaze and brown a bit. A friend of mine recently told me you can take the liquid it cooked in about a cup or two and let it boil down and reduce to about a half cup and then add yellow mustard to that and then it is like a demi-glace to serve with the corned beef.
May your day be filled with Irish blessing's and the blessing's of God. How can you go wrong with that? God so loved the world and you as a part of that that He let His Son, Jesus, come down to earth (He chose to leave the splendors of heaven just for you) and died just for you. He died so you could live in heaven for all eternity. That is great love is that not? It does not cost you anything to receive this free gift. Just ask Jesus to forgive your sins and admit to Him that you are a sinner and He will forgive you. You have to ask though. Then invite Him into your heart and He will respond to your beckon to Him.
I shared with you about the St. Patrick's Day meal prepared and guess what? None of that meal was free right. Someone had to go to the store and purchase the items to make that meal. It cost them money. The gift of salvation through Jesus Christ costs you no monetary investment on your part. It truly is a gift freely given to you. There aren't too many things now-a-days that you get for free. Especially when this gift given to you was out of love and sacrifice and dying on a wooden cross with much suffering and beatings before He was ever placed on that cross to die a death by crucifixion. Done just for you, a love so deep that His suffering was because you were placed before Him thousands of years ago because He knew you would call upon His name today. Doesn't that amaze you? It amazes me still today that He chose to do that very thing just for me. I can rejoice in knowing that one day Jesus and I will meet face to face in heaven and I will be able to thank Him with exuberance in my heart for His great love not just for me but for all of humanity. That amazes me still when I think about how He saved me and changed my life from the moment I asked Him into my heart and to forgive my sins.
