Last night I got this idea to start baking rugalach cookies. I had a couple of recipes already, so I read through them. I used a little bit of this and that from a couple of recipes. One called for using store bought Pillsbury pie dough. Last night I tried my had at baking some with the pie dough then I used the filling of another recipe mini chocolate chips with golden raisins, chopped walnuts and some brown sugar. I think that batch was my tester one and they were a little bit darker than I like. You actually put sugar and cinnamon on the board first before placing the pie dough on top of it. I put the filling in it and rolled it up length wise and then you cut slices to bake them.
I am not a quitter, so I continued to bake more today. I was up really early today and gathered my ingredients to make the cream cheese dough. I like to make 1/2 recipes in case I don't like it. I had 1 more premade pie crust, so I placed raspberry jam with a little bit of rhubarb jam and a sprinkling of mini chocolate chips. I had. Then the sugar, brown sugar finely chopped walnuts and golden raisins. This time I cut it into 12 wedges with a pizza cutter tool and you roll them up and place on the parchment lined cookie tray. With the homemade dough I followed the same in regard to cutting them in triangles and rolling them up. The same sugar filling plus I used rhubarb jam. Then I had another homemade dough to rollout, and I wanted to make a different filling since I has some cream cheese left over in the refrigerator. This was mixing cream cheese, powdered sugar, kosher fine salt and vanilla. You spread that on the dough, and I thought it needed more than that since you do not put the sugar, raisin, walnut mixture on top of this filling. So, I plumped some golden raisins by placing them in warm water to plump them up. I created the cream cheese filling then scattered golden raisins in this batch. This is not a 1 2 3 type of quick recipe. If making dough yourself, you then have to refrigerate it before working with the dough. Once you make the cookies you then place that in the refrigerator at least 30 minutes before baking them. Oh, there is an egg wash you brush on the cookies, and I had some decorative baking sugar, so I added a little of that on them also. I did need to bake these at least 2 minutes longer than the max time listed in the recipe. So, all in all it was a good day with my kitchen smelling wonderful.
You never know who you will run into in the grocery store do you. I was talking with the manager then this man says hello to me that he is the bee man. I looked at him like I need more info. He was the beekeeper I met at Publix one day. So, I tell him how I had to go to another city to get some of his honey and they only had the large size not the smaller size. He asked me what I paid for it @ the co-op. I told him 21.00 something. He looked like he was surprised at the price and told me the next time I need more honey that his phone number is on the bottle and to call. He said his wife is out here in my area a lot and maybe I could get some from them. Now it made sense when he said he was the bee man.
