Trying To Revive The Luncheon Potluck @ Work.

Weeks ago, Holy Spirit put this upon my heart to see if there was an interest of co-workers having a potluck for lunch one day. I asked my supervisor if it was ok to take a poll to see if there was interest. People in the office that day were receptive to it. I then put out there a potential date to have it on. We decided on that but unfortunately, we did not get out an email announcing the invite to the potluck, so we had to push it out a few weeks later. I am not the technical one in the group per say so I enlisted a co-worker to send out the email and they did. I then noticed that when in the office we no longer have group short meetings with seeing how everyone is doing. So, I asked and also invited 2 supervisors to a brief meeting to see how everyone is doing and discuss the upcoming potluck. It was good to see co-workers gather together and not just say hello in passing by in the hallway or at the copy machine.

I checked our current luncheon supply cabinets and placed on a board what we have already on hand. I volunteered to get large sized plates since we have lots of dessert sized plates and plastic silverware on hand already. Then my co-worker posted a sign-up sheet on what someone wanted to bring. I put down I would make the Wolfgang Puck rice dish with smoked sausage and a dessert. I made the rice dish last night and baked the shortcut carrot cake 2 layers. I let them cool overnight and loosely covered them with waxed paper. This morning I made the frosting and frosted the cake. This frosting recipe is so good I have to remember to use it when I make a red velvet cake. The recipe gives a generous amount of frosting it yields. Simple recipe you should try it out.

2 8oz. packages of cream cheese at room temperature; 2 cups of sifted powder sugar and 1 container of frozen whipped topping (Cool Whip type) thawed. I placed the cream cheese in a bowl and beat it on a high setting until all done then gradually added the 2 cups of powder sugar then you add the whole container of whipped topping. Simple, isn't it? Bake a cake today and try out this frosting recipe because you will be glad you did.

Not knowing what everyone is bringing I also bought a BBQ sauce, horseradish sauce and a yellow mustard to have on hand if needed. I also am bringing in potholders if needed when people heat up dishes or can use them to place a hot dish on top of on the table. I also purchased 2 dish towels and 2 dish cloths for washing dishes. I volunteered to clean up and wash dishes if needed. It is so nice for someone to bring home a clean dish or serving container and not have to wait until they get home to clean it. I used to help the 2 co-workers when we used to have potlucks on a more regular basis when it came time to cleaning up and doing dishes.
