This Is My Version Of Cocoa Mint Belgian Waffles:

I added to the waffle mix peppermint extract along with a splash of vanilla extract. As I am doing this I get this lightbulb idea ... add baking cocoa and I did. I do not use exact measurements when I am creating something. This is my creating time to explore. I tried a bit of the batter to see if it needed anything, it did. The baking cocoa can be bitter so I added a dash of turbinado sugar.
When I make Belgian waffles I tend to make them with a crispy texture more so then a softer texture.
While the waffle is hot off the griddle so to speak put a little butter on it to melt/soften then dust with powdered sugar, enjoy.
