I Was Up Early Today Baking. Last Batch Of Cookies In The Oven Now. Want To Know What I Baked?

Let's see I started off baking double chocolate gluten free cookies. There are family members that practice gluten free. I have to be honest with you, I know very little about this subject. Thought I would bless them this year with gluten free cookies. Know what, even though they are gluten free as a lifestyle they still like my butterball cookies. Last year I did not make any for Christmas and I guess they really missed them. Who would ever think that a cookie would bless someone. Something as simple as baking a cookie?
Then onto Ghirardelli Shortbread Brownies. After that Shortbread cookies that I transformed into a version of thumb print type of cookie. See one of my relatives likes raspberry kolachy cookies. My mother made kolachy cookies but only had apricot filling and not raspberry filling. So I took the shortbread cookie mix and after they baked I put an indentation in the cookie and filled some with apricot preserves and the others with raspberry and put them back into the oven for a few minutes for the jam to settle a bit.
Final cookie made was the butterball cookies. Some may know them as wedding cookies or even Russian teacakes. Today I filled some with mini peanut butter cups and mini caramel cups too. What I do in cut back the amount of walnuts the recipe calls for and then you take a piece of chocolate, etc. and mold the cookie dough around it. When you bite into the cookie there is that surprise awaiting your taste buds.
Let me help you out with baking ok. Years ago I discovered Ghirardelli makes excellent brownies. What I do is add a few Ghirardelli bitter chocolate chips to the mix and it makes them yummy. I really don't eat brownies but whenever I make them people like them. This time of the year Ghirardelli comes out with a big box of Milk Chocolate Shortbread Cookie mix. You can get it at Aldi's for I believe $6.99. There is enough in the box to make 3 batches of cookies. I also stumbled on this a few years ago and it proved to be a good cookie mix so I know this one works. Sometimes I make the cookies with the milk chocolate drops that come with the mix. I think I have enough chocolate variety now so I opted to not make any with the chocolate drops. On the back of the box is the recipe for the shortbread brownie.
Let me encourage you to bake a cookie or two and share them with others. My neighbors know that when I bake I usually make up a plate for them. They know I baked if they see a bag with a plate inside of it attached to their door knob. I love blessing people and if it is via baking that is fine with me.
In the midst of baking I received an Andrea Bocelli Christmas video so I turned that on while I was baking. You have to pray for me in regard to my technical capabilities. Thought I sent the video to my children and low and behold there was another person that somehow also got the video. That is what I get for trying to send it from my phone and not my computer. I sent an apology email letting them know it was for my children. Maybe Holy Spirit wanted them to see this video? I have heard of stranger things happening. Prayer for increased technical capability would be most helpful now. Thank you and happy, happy baking.
